Pumpkin Cobbler Recipe Without Cake Mix
At this very moment I cannot think of a single pumpkin dessert that is better than this Pumpkin Pecan Cobbler! It is absolutely fantastic.
This cobbler has a warm pudding-like gooey caramel textured base with a perfectly crispy sweet topping. Dress it up with a scoop of vanilla ice cream and everything in your world will stop as you slowly devour the best slice of Fall you’ll ever have!
I always save pumpkin for Fall so I can enjoy it in things like No Bake Triple Layer Pumpkin Pie, Pumpkin French Toast, Baked Pumpkin Cinnamon Sugar Donuts, or Pumpkin Cheesecake Snickerdoodles!
What You’ll Need for the Cobbler:
- 1 cup + 3 tbsp Flour
- 2 tsp Baking Powder
- 3/4 cup Sugar
- 1 tsp Cinnamon
- 1/2 tsp Nutmeg
- 1/2 tsp Cloves
- 1/2 cup Pumpkin Puree
- 1/4 cup Milk
- 1/4 cup Butter, Melted
- 1 1/2 tsp Vanilla
And the Topping:
- 1/2 cup Sugar
- 1/2 cup Brown Sugar
- 1/4 cup Pecans, Chopped
- 1 1/2 cups Hot Water
How to Make Pumpkin Pecan Cobbler
- Preheat oven to 350 degrees. Spray an 8-inch casserole dish with high sides with non-stick spray and set aside.
- In a medium size bowl, whisk together 1 cup + 3 tbsp flour, 2 tsp baking powder, 3/4 cup sugar, 1 tsp cinnamon, 1/2 tsp nutmeg, and 1/2 tsp cloves. Set aside.
- In a small bowl, mix together 1/2 cup pumpkin puree, 1/4 cup milk, 1/4 cup melted butter, and 1 1/2 tsp vanilla. Pour mixture into the dry ingredients and mix to create batter.
- Pour into prepared dish.
- In separate bowl, stir 1/2 cup sugar, 1/2 cup brown sugar, and 1/4 cup chopped pecans together. Sprinkle over the batter evenly.
- Pour 1 1/2 cups hot water over the entire dish, do not stir.
- Bake for 40 minutes or once the middle is set.
