Blueberry White Chocolate Muffins
My Dad reads a lot. And I mean A LOT! He finds all sorts of new recipes for me to try in magazines, the newspaper, or from listening to the radio. He found this recipe for White Chocolate Blueberry Muffins while reading and asked my Mom to make these for you!
This was the first time I tried them and they are absolutely delightful! The combination of the sweet white chocolate and the tart fresh blueberries are surprisingly a perfectly compliment to each other! You can use frozen blueberries in this recipe, too.
These are officially one of my all-time favorite muffins! Some of my other favorites are Hulk Spinach Banana Muffins, Banana Chocolate Chip Muffins, Strawberry Muffins, and the Best Blueberry Muffins!
What You’ll Need for the Muffin Batter:
- 2 cups Flour
- 1/2 cup Sugar
- 1/4 cup Brown Sugar
- 2 1/2 tsp Baking Powder
- 1/2 tsp Salt
- 3/4 cup Milk
- 1 Egg
- 1/4 cup Butter, Melted
- 1 tsp Vanilla
- 1 1/2 cups White Chocolate Chips
- 1 1/2 cups Blueberries
The Streusel:
- 1/3 cup Sugar
- 1/4 cup Flour
- 1/4 tsp Cinnamon
- 3 tbsp Butter, Cold
And the Drizzle:
- 1/2 cup White Chocolate Chips
How to Make White Chocolate Blueberry Muffins
- Preheat oven to 375 degrees. Line a muffin pan with liners.
- In a large bowl, whisk together 2 cups flour, 1/2 sugar, 1/4 cup brown sugar, 2 1/2 tsp baking powder, and 1/2 tsp salt.
- Stir in 3/4 cup milk, 1 egg, 1/4 cup melted butter, and 1 tsp vanilla.
- Fold in 1 1/2 cups white chocolate chips and 1 1/2 cups blueberries.
- Spoon batter into muffin cups until almost full.
- In a small bowl, make the streusel by combining 1/3 cup sugar, 1/4 cup flour, 1/4 tsp cinnamon, and 3 tbsp cold cubed butter with a fork until the mixture looks like crumbs.
- Sprinkle over batter, leaving enough to cover another 6 muffins.
- Bake for 22 minutes or until a toothpick inserted in the middle comes out clean.
- Once the muffins are cool, melt 1/2 cup white chocolate chips in the microwave in 30 second intervals stirring at each interval until melted and smooth.
- Drizzle over the muffins.
