An easy blueberry sauce that can be used on pancakes, ice cream, cheesecake, or in overnight oats!
Blueberry Sauce
Sometimes I get a little carried away when I buy fruit and we can’t eat it fast enough before it starts to go bad. When the blueberries start to look sad I usually throw them in the freezer so I can turn them into a Blueberry Cheesecake Protein Smoothie or a Healthy Blueberry Pear Smoothie.
Other times I like to turn them into a Homemade Blueberry Sauce so I can use them for Blueberry Pie Overnight Oats!
What You’ll Need:
- 1 cup Blueberries
- 1/4 cup Water
- 1 tbsp Cornstarch
- 1/4 cup Sugar
- 1 tbsp Lemon Juice
How to Make Homemade Blueberry Sauce
- In a sauce pan, combine 1 cup blueberries, 1/4 cup water, 1 tbsp cornstarch, and 1/4 cup sugar. Stir to combine.
- Continue stirring over medium heat until sauce starts to form. Reduce the heat to low and keep stirring frequently for a minute or two until a thick sauce forms.
- Remove from heat and stir in 1 tbsp lemon juice.
Recipe Notes:
- Storing – Store in the refrigerator in a sealed container.
- Consistency – You will need to reheat the sauce either in the microwave or stove top after storing in the refrigerator to return it to sauce consistency.
- Blueberries – You can use fresh or frozen. This is a great way to use up blueberries that are starting to go bad!
