I’ve never liked the term ‘influencer.’ I don’t consider myself one, nor do I aspire to ever be one. I am simply a food blogger. I would much rather be known as someone who inspires!
I was lamenting with a friend about our efforts to make lifestyle changes and she compared herself to a howling dog laying on the front porch – with a nail poking up through the board it’s lounging on. Wowsa! That analogy embarrassingly resonated with me.
She explained that she has gotten so comfortable that it takes an insurmountable amount of strength and determination to make changes. Just like the dog who is too lazy to move off the nail because he’s comfortable. I think all of us have reached that level of laziness (people in denial call it comfort instead) at some point in our lives. There’s nothing wrong with comfort, right? Comfort feels warm and safe. Comfort is good… or is it?
Actually, comfort is one of your worst enemies. It makes you unproductive, leaves your potential unfulfilled, makes you less adaptable and resilient, traps you into thinking you are not good enough, and leaves you feeling isolated and disconnected. The people who are successful are not perfect. They don’t have any special magic, experience, or advantages when they start. The only difference is they are trying – they have chosen to do something. They are consistently challenging themselves to leave their comfort zone.
I want to inspire you to change just one thing. Do that thing you’ve been procrastinating. Stop scrolling and saving videos of other people doing things, and go do the things you wish you were doing. If it seems impossible, get more sleep first. Most people are sleep deprived. When you are rested, you’ll wake up with a more ambitious attitude!
Break the cycle of comfort by making your own Vegetarian Walnut Burgers! These are fantastic, I love them. They are crispy on the outside, are made with easy to find ingredients, and freeze well!
You can serve Ranch Pasta Salad, Fruit Salsa, Broccoli Salad, Butternut Squash Salad, Vegetarian Doritos Taco Salad, Classic Potato Salad, or Vegetarian Baked Beans with them if you’d like!

What You’ll Need:
- 1 1/2 cups Cheese, Shredded
- 1 cup Walnuts, Finely Chopped
- 1 cup Soft Bread Crumbs
- 1/2 cup Onions, Finely Chopped
- 1 Egg, Beaten
- 1 tbsp Ketchup
- 1 tsp Basil
- 1 tsp Thyme
- 1/4 tsp Salt
- 2 tsp Water
- Oil for Frying

How to Make Vegetarian Walnut Burgers
- Mix together 1 1/2 cups shredded cheese, 1 cup finely chopped walnuts, 1 cup soft bread crumbs, 1/2 cup finely chopped onions, 1 beaten egg, 1 tbsp ketchup, 1 tsp basil, 1 tsp thyme, 1/4 tsp salt, and 2 tsp water in a large bowl.
- Shape into 6 burger patties. If the batter seems dry, add more water so it’s more moist.
- Fry in a skillet with a little oil until brown on each side.

Ingredients
- 1 1/2 cups Cheese, Shredded
- 1 cup Walnuts, Finely Chopped
- 1 cup Soft Bread Crumbs
- 1/2 cup Onions, Finely Chopped

Can you just buy the bread crumbs from the store or do they literally have to be “soft?”
You can use store bought bread crumbs instead, just make sure to add 1/2 cup water to them to moisten!
