Hot Open-Face Vegetarian Roast Beef Sandwich
For most of my life, Mac & Cheese or Grilled Cheese were my only two vegetarian options when we went out to eat. Over the past several years, restaurants have really improved their menu’s! It’s been so much fun trying new things. My Dad is determined to give you vegetarian variations of every single meat dish possible. He made this Vegetarian Hot Beef Sandwich with Mashed Potatoes & Gravy!
Over time he’s made several things for those looking for vegetarian options, like Vegetarian Roast Beef Sandwiches, Vegetarian Chili, Vegetarian Mexican Lasagna, Vegetarian Beef Stew, Vegetarian Stuffed Peppers, Vegetarian Reuben Sandwiches, & Baked Beans!

What You’ll Need:
- 1 (11.25 oz) box Frozen Garlic Texas Toast
- 5 lbs Yukon Gold Potatoes, Peeled & Quartered
- 1 1/2 tsp Salt
- 4 tbsp Butter, Melted
- 1 cup Whole Milk
- 1 tsp Garlic Powder
- 1 (10 oz) bag Beyond Meat Steak Tips
- 1 small Onion, Diced
- 3 packets Vegetarian Gravy Mix
- Parsley Flakes, Optional

How to Make a Vegetarian Hot Beef Sandwich with Mashed Potatoes & Gravy
- Bake 8 pieces of Garlic Texas Toast in the oven as directed on the back of the box. Set aside.
- Prepare Creamy Mashed Potatoes by placing 5 lbs peeled & quartered Yukon Gold potatoes in a large pot and covering with water. Add 3/4 tsp salt and bring water to a boil.
- Cook the potatoes until they are fork tender.
- Drain the potatoes in a strainer, then transfer to a bowl.
- Add 4 tbsp melted butter, 1 cup whole milk, 1 tsp garlic powder, and 3/4 tsp salt.
- Mash with a potato masher or hand mixer just until creamy.
- Season with additional garlic powder and/or salt if desired.
- In the meantime, prepare 1 (10 oz) bag Beyond Meat Steak Tips according to the directions on the bag. Dice 1 small onion and sauté with the steak tips until the onions are translucent.
- Prepare 3 packets of vegetarian gravy mix.
- To serve, place a heaping scoop of mashed potatoes on a piece of Texas Toast. Then layer with steak tips and top with desired amount of gravy. Garnish with parsley flakes if desired.
