Easy Vegetarian Taco Baked Potato
I once overheard someone in a breakroom say they were having Taco Baked Potatoes for dinner. I was intrigued! I had never heard of such a thing and was anxious to try the idea. Some time passed and I had forgotten about it until one day I was trying to use up leftover taco toppings.
The forgotten idea came back to me so I decided to make my own vegetarian variation. My family loves these Vegetarian Taco Baked Potatoes! Not only do I love them, but it makes dinner so easy for me! You can stuff and pile on your favorite taco toppings, so each person in your family can make them the way they’d like.

What You’ll Need:
- 10 Russet Potatoes, Baked
- Oil for Baking & Frying
- 1 (16.2 oz) bag Morningstar Crumbles
- 1 (1 oz) packet McCormick Taco Seasoning
- Taco Toppings
How to Make Vegetarian Taco Baked Potato
- Preheat oven to 400 degrees. Line a baking pan, with sides, with aluminum foil shiny side up.
- Wash 10 russet potatoes and pat dry with paper towel. Poke holes into the potatoes with a fork.
- Brush oil on the outside of the potatoes and place on the prepared pan.
- Bake for 45-60 minutes. Test the tenderness with a fork and adjust the baking time accordingly.
- In the meantime, prepare 1 (16.2 oz) bag Morningstar Crumbles by placing them in a frying pan with a little oil and 1 (1 oz) packet McCormick Taco Seasoning. Fry over medium heat, stirring frequently, until browned.
- When potatoes are done baking, slice open and stuff with crumbles and favorite taco toppings.
How to Bake a Potato
- Brush oil on the outside of the potato and place on the prepared pan.
- Bake for 45-60 minutes. Test the tenderness with a fork and adjust the baking time accordingly.
