Easy Vegetarian Spaghetti and Meatballs
At the beginning of every month my Grandma & I work together to come up with a list of recipes she is going to make for you. When she suggested these Cream Cheese Meatballs for Vegetarian Spaghetti & Meatballs I had never heard of them before so I was excited to give them a try!
They did not disappoint! These are absolutely fantastic, they have such great flavor! If you aren’t in the mood for spaghetti, you can serve them with Scalloped Potatoes or Roasted Garlic Mashed Potatoes. And Buttery Garlic Green Beans, Honey Butter Skillet Corn, or Easy Garlic Knots would go nicely with these no matter how you serve them!
What You’ll Need:
- 1/2 cup Walnuts, Chopped
- 4 oz Cream Cheese, Softened
- 1 cup Cottage Cheese
- 1 medium Onion, Chopped Finely
- 1 cup Italian Style Bread Crumbs
- 1/2 tsp Salt
- 2 tsp McKay’s Beef Seasoning
- 3 Eggs
- Spaghetti Noodles
- Pasta Sauce
How to Make Vegetarian Spaghetti and Meatballs
- Beat together 1/2 cup chopped walnuts, 4 oz softened cream cheese, 1 cup cottage cheese, 1 finely chopped onion, 1 cup Italian style bread crumbs, 1/2 tsp salt, 2 tsp McKay’s beef seasoning, and 3 eggs.
- Let sit for 15 minutes.
- Form into 1″ size meatballs. Place meatballs in a frying pan with oil over medium heat and rotate to fry all sides until golden brown.
- Cook desired amount of spaghetti noodles according to the directions on the back of the box. Once cooked, drain, and pour warmed sauce over the noodles. Top with meatballs and parmesan cheese.
