Mexican Lasagna with Tortillas
I am a self-taught food blogger. I taught myself how to use all of the applications required to run it, I taught myself how to be a web developer, I taught myself how to take pictures of food, and I taught myself how to be a graphic designer. I am still a work in progress on all of the above!

What You’ll Need:
- 8 Burrito Size Flour Tortillas
- 1 (27 oz) can Chili Beans
- 1 (24 oz) jar Salsa
- 1 (16 oz) bag Morningstar Griller Crumbles, Thawed
- Shredded Cheese
- Desired Toppings

How to Make Vegetarian Mexican Lasagna
- Preheat oven to 350 degrees. Spray 9 x 13 pan with non-stick spray.
- Line bottom of the pan with 8 burrito size flour tortillas, running them up the sides of the pan to make an edge.
- In a medium size bowl, mix together 1 (27 oz) can chili beans, 1 (24 oz) jar salsa, and 1 (16 oz) bag thawed Morningstar Griller Crumbles.
- Pour half the mixture over the prepared tortillas and spread evenly. Sprinkle desired amount of shredded cheese over the mixture and fold over the tortillas. Place 2 tortillas on top to cover the mixture.
- Pour remaining mixture over the tortillas and spread evenly. Sprinkle desired amount of shredded cheese over the mixture.
- Bake for 1 hour.
- After removing from the oven, top with desired toppings such as diced tomato, black olives, lettuce, diced onion, or guacamole.

Recipe Notes:
- Tortillas – You can really use any size flour tortilla, just adjust accordingly to cover the area. You may find you like to use more or less than the recipe calls for, too.
- Crumbles – You don’t have to thaw the crumbles first, you can mix them in frozen. Thawing them helps to break them up into smaller pieces and cover more area. You could also level them up by frying them in a little oil with a packet of taco seasoning to enhance the flavor!
- Make Ahead – It can also be made ahead of time. We actually like it better the second day because it has a chance to firm up.
