Seventh-day Adventist Special K Loaf
This recipe is a favorite among Seventh-day Adventists! There are many variations of it, this is my Grandma’s recipe. This loaf is nostalgic for me. I grew up eating it for Sabbath lunch or for potluck after the church service. I can smell it baking a mile away! If you are vegan, here is a Vegan Special K Loaf recipe for you.
If I had to choose my last meal, it would be this Special K Cottage Cheese Loaf with Roasted Garlic Mashed Potatoes and my Dad’s canned green beans!
It would also taste good with Scalloped Potatoes, Buttery Garlic Green Beans, Easy Garlic Knots, Honey Butter Skillet Corn, and No Bake Cherry Cheesecake Bars or Easy Blueberry Crisp for dessert!
What You’ll Need:
- 5 Eggs, Beaten
- 1 large Onion, Diced & Sautéed
- 2 lbs Cottage Cheese
- 9 cups Special K Cereal
- 4 tbsp Bragg’s Aminos
- 1 cup Pecan Meal
- 1/4 cup Evaporated Milk
- 2 tbsp McKay’s Beef Seasoning, Optional
How to Make Special K Cottage Cheese Loaf
- Preheat oven to 350 degrees. Spray 9 x 13 pan with non-stick spray and set aside.
- Beat 5 eggs in a large bowl.
- Sauté 1 large diced onion in butter until onions are translucent.
- In the meantime add 2 lbs cottage cheese, 9 cups Special K cereal, 4 tbsp Bragg’s Aminos, 1 cup pecan meal, and 1/4 cup evaporated milk to the beaten eggs. Add 2 tbsp McKay’s beef seasoning if desired. Stir in onions when ready.
- Mix together well. Press firmly into the prepared pan.
- Bake for 45 minutes.
Recipe Notes:
- Freeze – This loaf freezes nicely covered in a freezer safe container.
- McKay’s – The vegetarian beef seasoning is optional. It’s purpose is to give the loaf some color and a little flavor.
- Vegan – If you are looking for a vegan version, you will love this Vegan Special K Loaf!
