Meatless Sloppy Joes
When I am pressed for time in the kitchen, I work best alone. There are times my husband has tried ‘helping’ and it’s not helpful, so he gets the look and clears out. Except one day I sent him to the other side of the island to chop my bounty of vegetables from the Farmer’s Market and it was the best idea I’ve ever had!
It turns out he is fast and efficient at chopping veggies. And we enjoy spending the time together! So that’s his job now. It is such a great use of our time. I prefer to have everything ready to use in the refrigerator or freezer instead of chopping when I need it. It really cuts down on the prep time for meals!
The only veggies you need to chop for these Vegetarian Sloppy Joes are pepper and onion! This is actually my Mom’s signature recipe and every time she serves them to a crowd, they are licking their plates clean. I know this is going to come as a shock to the carnivores, but many meat eaters have preferred this recipe over the meat version. People rave about these!
For a complete meal, serve these with Honey Butter Skillet Corn, Vegetarian Doritos Taco Salad, and Strawberry Shortcake for dessert!

What You’ll Need:
- 1 Green Pepper, Diced
- 1 Onion, Diced
- 2 tbsp Oil
- 3 (12 oz) bags Morningstar Griller Crumbles
- 1 1/2 cups Brown Sugar
- 2 cups Ketchup
- Dash of Dry Mustard

How to Make Vegetarian Sloppy Joes
- Sauté 1 diced green pepper and 1 diced onion in 2 tbsp oil.
- Mix all ingredients together in a sauce pan and let simmer over low-medium heat for 15-20 minutes.

Recipe Notes:
- Freeze – You can easily freeze the Sloppy Joe mixture in a freezer safe container. My parents use an ice cream bucket! You can thaw and refreeze it as well.
- Crock Pot – You can make these in a crock pot instead of the stove top, but the time they simmer will vary depending on the size of the crock pot you use. The average time it will take is about 90 minutes.
- Meatless Crumbles – Any brand of vegetarian meatless crumbles will work, but we prefer the Morningstar Griller Crumbles. Use the 12 oz bag.
- Smaller Batch – You can easily make a smaller batch by cutting the recipe in half.
