Easy Broccoli Salad
It doesn’t happen often, so when I call my husband ‘king’ his ears perk up and our son calls me out on wanting something. It’s true. I don’t use that word lightly, so when I do, I definitely want something! Recently it was a pretty big thing, so I really laid it on thick.
After my dramatic production was over, it turned out he already knew what I wanted. How does he do that?! And he already had an answer that went in my favor! He gets me and I love him for it.

What You’ll Need for the Dressing:
- 1 1/4 cups Mayonnaise
- Zest from 1 Lemon
- 1 tbsp Lemon Juice
- 2 tbsp Rice Vinegar
- 1/4 cup Sugar
- 1 tsp Salt
- 1/4 tsp Dry Mustard
- 1/8 tsp Cayenne Pepper
- 1/4 cup Imitation Bacon Bits
And the Salad:
- 5-6 cups Broccoli Florets
- 1 cup Cranberries, Dried
- 1/3 cup Sunflower Seeds
- 1 cup Cheddar Cheese, Shredded
- 1/3 cup Red Onion Chopped

How to Make Broccoli Salad
- Make the dressing by whisking together 1 1/4 cups mayonnaise, zest from 1 lemon, 1 tbsp lemon juice, 2 tbsp rice vinegar, 1/4 cup sugar, 1 tsp salt, 1/4 tsp dry mustard, and 1/8 tsp cayenne pepper in a large bowl.
- Chop 2 heads of broccoli, making about 5-6 cups broccoli florets, and place in the dressing.
- Then add in 1 cup dried cranberries, 1/3 cup sunflower seeds, 1 cup shredded cheddar cheese, and 1/3 cup chopped red onion. Mix until well combined.
- Just before serving, stir in 1/4 cup imitation bacon bits.

Dressing
