The Best Vegetarian Lasagna
This is my Mom’s famous Vegetarian Lasagna, she made it just for you! She recently retired so I’ve been trying to get her to work for me, but it’s taking some convincing. Apparently working for free isn’t one of the retirement benefits she was looking forward to! HA!
My Mom’s lasagna is one of our all-time favorite meals. It goes perfect with my Grandma’s Homemade Garlic Bread! For a complete meal you could serve Buttery Garlic Green Beans as a side and Peach Cobbler for dessert!
What You’ll Need:
- 1 (12 oz) bag Morningstar Crumbles
- 1 medium Onion, Diced
- 1 (67 oz) jar Prego Spaghetti Sauce
- 18 Lasagna Noodles
- 2 lbs Mozzarella Cheese, Shredded
- 8 oz Ricotta Cheese
- 2 Eggs
- 1/3 cup Cheddar Cheese, Shredded
How to Make Vegetarian Lasagna
- Preheat oven to 350 degrees. Spray 12 x 16 pan with non-stick spray.
- Saute 1 (12 oz) bag Morningstar crumbles with 1 diced medium sized onion in a little oil until onions are translucent.
- Mix 8 oz Ricotta cheese with 2 eggs until smooth and creamy and set aside.
- Spread a layer of sauce on the bottom of the greased pan.
- Place layer of uncooked lasagna noodles on top of the sauce.
- Spread thin layer of sauce on top of the noodles.
- Use half of the Ricotta mixture and drop by spoonful over the noodles and spread out.
- Sprinkle half of the shredded Mozzarella cheese on top of the Ricotta mixture.
- Sprinkle half of the burger mixture on top of the cheese.
- Place down another layer of lasagna noodles and repeat the steps with remaining ingredients.
- Place a final layer of lasagna noodles on top. Using remaining sauce and spread over top until the noodles are completely covered. (Using uncooked noodles requires a little extra sauce to make sure they cook and soften.)
- Cover with foil and cook for 1 hour and 15 minutes. Remove foil and sprinkle 1/3 cup shredded cheddar cheese on top and bake uncovered for additional 15 minutes.
