Vegetarian Sauerkraut Sandwich
A church I drive by often always has great quotes on their sign. Right now it says, “Don’t give up, even Moses was a basket case once.’ I love that!
Not giving up means something different to me each day. Some days it means don’t give up by skipping or shortening my walk, other days it means don’t give up and hit the drive through instead of making a healthy meal for my family.
When you feel like giving up and just want something easy, try making this Vegetarian Reuben Sandwich! I can’t guarantee your entire family will like it, sauerkraut isn’t for everyone. But, replace it with lettuce if they don’t like it!

What You’ll Need:
- 2 slices Rye Bread
- 2 tbsp Butter
- 4 slices Worthington Corned Beef Slices
- 2 slices Swiss Cheese
- 1/3 cup Sauerkraut, Drained
- Thousand Island Dressing
How to Make a Vegetarian Reuben Sandwich
- Spread butter on the outside of 2 slices of rye bread. Place 1 slice butter side down on a skillet over medium heat.
- Add 4 slices Worthington Corned Beef slices. Then add 2 slices of swiss cheese.
- Lay 1/3 cup drained sauerkraut over the cheese, then place other slice of bread butter side up. Flip and grill that side, too.
- Cook until cheese melts and the bread is crispy.

Recipe Notes:
- Bread – You can grill or toast the bread, either works!
- Dressing – Thousand Island or Russian dressing both taste great with this sandwich. And you can either add it right into the sandwich or dunk the sandwich into it.
