Honey Garlic Roasted Carrots
When I took a leap of faith and quit my job to blog full-time, I jokingly told my nervous parents that we might have to move into their basement if following my dream didn’t go as planned. I thought it was hilarious, they did not.
Ever since then my Mom finds random treasures she thinks I might like to use, like the pretty plate in these pictures. She considers it her contribution to keeping me from living in her basement! HA!
I like carrots, but I find them a little boring just as they are. I like to jazz them up and turn them into these Honey Garlic Butter Roasted Carrots! They are delicious this way!

What You’ll Need:
- 2 lbs Carrots
- 5 tbsp Butter
- 4 cloves Garlic, Minced
- 2 tbsp Honey
- 1/4 tsp Salt
- Parsley
How to Make Honey Garlic Butter Roasted Carrots
- Preheat oven to 425 degrees.
- Spray a baking sheet with non-stick cooking spray and set aside.
- Cut up 2 pounds of carrots into 2-3 inch pieces and set aside.
- Melt 5 tbsp butter over medium heat in a sauce pan. Stir in 4 cloves minced garlic and cook for 3 minutes or until lightly browned, stirring frequently.
- Remove from heat and stir in 2 tbsp honey until well combined.
- Toss the carrots in the sauce. Season with 1/4 tsp salt.
- Transfer carrots to the baking sheet and spread evenly.
- Bake for 22-25 minutes or until the carrots are browned and tender.
- Remove from oven and garnish with chopped parsley.
