The Best Peach Cobbler
If this is what living in the south tastes like, then count me in! Except, the south is humid and doesn’t get cold enough to kill Jurassic Park size bugs. So… I’ll just stay right where I am and enjoy these fresh peaches in the comfort of my own deck while the breeze blows, the birds chirp, and the kids laugh and play! It just doesn’t get any better than that.
I wish I could somehow convey the smell and taste of this deliciousness! The sweet smell of this Peach Cobbler will smell up your whole house. And the cakey topping layer combined with the juicy peaches is absolute perfection!
It’s hard buying just a few peaches at a time for me, I usually buy a case of them! Then I turn them into things like Cinnamon Roll Peach Cobbler, Baked Sticky Peach Pudding, and Peach Cobbler Muffins!
What You’ll Need:
- 4 cups Peaches, Peeled & Sliced
- 2 tbsp + 1 cup Sugar
- 1/2 cup Butter, Softened
- 1 cup Flour
- 1 tsp Baking Powder
- 1 Egg
- 1 tsp Vanilla
How to Make Peach Cobbler
- Preheat the oven to 350 degrees. Spray a 8 x 8 baking dish with non-stick spray and set aside.
- Slice and peel enough peaches to make 4 cups. Spread evenly in the bottom of the prepared pan. Sprinkle 2 tbsp sugar over the peaches.
- In a medium size bowl, beat together 1 cup sugar and 1/2 cup softened butter until well combined. Add in 1 cup flour and 1 tsp baking powder and mix. Then mix in 1 egg and 1 tsp vanilla until the batter reaches the consistency of cookie dough.
- Carefully spread batter over the peaches. Sprinkle additional sugar over the top of the batter before baking if desired.
- Bake for 35-40 minutes or until crust is golden brown.
Recipe Notes:
- Sugar – Taste your peaches first. They may require sprinkling additional sugar over them before spreading the batter on top.
- Serving – This should be eaten the same day it’s baked.
