This is one of those recipes you can make work for you and your family! There really is no right or wrong way to make this. As long as the noodles are cooked you can use whatever veggies and meat substitute you’d like! And to go with this Vegetarian Pancit, we like to have Spring Rolls!

What You’ll Need:
- 1 bag Rice Noodles
- 1/4 cup Carrots
- 1/4 cup Cabbage
- 1/4 cup Celery
- 1/4 cup Bell Peppers
- 1/4 cup Broccoli
- 1/4 cup Baby Corn, Canned
- 1/4 cup Frozen Peas (Or Pea Pods)
- 1/4 cup Scallions
- Bragg’s Liquid Aminos
- Morningstar Chicken Strips, Optional
How to Make Vegetarian Pancit
- Cook 1 bag rice noodles according to the directions on the package. Rinse well in cold water.
- Steam 1/4 cup diced carrots and 1/4 cup diced celery together.
- Steam 1/4 cup cabbage and 1/4 cup sliced peppers together.
- Steam 1/4 cup chopped broccoli.
- Run hot water over 1/4 cup frozen peas to thaw.
- Mix together prepared noodles, steamed vegetables, 1/4 cup canned baby corn, and 1/4 cup chopped scallions.
- Toss desired amount of Bragg’s Liquid Aminos into the noodles.
- Optional: Fry Morningstar Chicken Strips and toss into the noodles.
