Easy Hot Cocoa Cake Mix Cookies
I am the worst when it comes to waiting for a story to unfold in a movie, TV show, or book. I just HAVE to know how it ends before I actually get to the ending! If it’s a movie or TV show, I can’t help but Google the ending. And if it’s a book, I flip to the back of the book and skim through the ending. It’s terrible! I just can’t take the suspense!
Spoiler alert! These Hot Cocoa Cake Mix Cookies are delicious! I dreamed up this super easy idea while I was laying in bed one night. Sometimes my ‘great ideas’ work out beautifully, and sometimes they are a complete flop. I was thrilled these turned out as I envisioned!

What You’ll Need:
- 1 box Chocolate Cake Mix
- 2 Eggs
- 1/2 cup Oil
- 1/2 cup Chocolate Chips
- 1 1/2 tbsp Butter
- 2 tsp Milk
- 2 tsp Corn Syrup
- Mini-Marshmallow Bits
How to Make Hot Cocoa Cake Mix Cookies
- Preheat oven to 350 degrees. Line a baking sheet with parchment paper and set aside.
- Combine 1 box chocolate cake mix, 2 eggs, and 1/2 cup oil and mix well.
- Scoop 1 1/2 tbsp balls and place onto the prepared pan.
- Bake for 10 minutes.
- Let cool.
- In the meantime, make the chocolate ganache by melting together 1/2 cup chocolate chips, 1 1/2 tbsp butter, 2 tsp milk, and 2 tsp corn syrup in the microwave for 30 seconds. Stir until completely well combined and smooth.
- Spread a dollop of the mixture onto the tops of each cookie, dividing evenly.
- Sprinkle mini-marshmallow bits on top of the ganache while still wet.

Hot Cocoa Cake Mix Cookies
