An easy to make soft and chewy cookie that tastes like birthday cake! Everyone loves the taste of these festive cake mix cookies!
My son used to sleep with a pile of stuffed animals. He has a hedgehog named Prickles, a dog named Floppy, a penguin named Penguin, a duck named Quakers, a Bassett Hound named Charlie, and a snake named Midnight. And that isn’t all! There are more!
As a toddler he would set them up to play with. They have been a very regular part of his childhood. They’ve sat at the table with us for dinner, they’ve been on the receiving end of a football, they’ve been set up to sing as a Praise Team, and they would have unexpected birthday parties. For some reason Floppy the dog had more birthday’s then the others. So I have kept a box of Funfetti cake mix in the pantry for all of those unexpected birthday’s.
Sadly he has outgrown the days of celebrating his stuffed animals birthday’s, so I re-purposed my last box of cake mix and used it to make these Funfetti Cake Mix Cookies.
What are Cake Mix Cookies?
- Cake Mix Cookies are a 3-ingredient cookie made with any boxed cake mix combined with any mix-in’s. Note: There are many variations of cake mix cookies.
- You can mix and match flavors, such as:
- Chocolate Cake Mix + Peanut Butter Chocolate Chips, White Chocolate Chips, Mint Chips, or Milk Chocolate Chips and White Chocolate Chips
- Red Velvet Cake Mix + White Chocolate Chips or Milk Chocolate Chips
- Carrot Cake Mix + Cream Cheese Frosting
- Spice Cake Mix + Butterscotch Chips or Milk Chocolate Chips
- White Cake Mix + Food Coloring for Valentine’s Day, Patriotic Days, or Christmas
- Yellow Cake Mix + Milk Chocolate Chips
- Strawberry Cake Mix + White Chocolate Chips
- Chocolate Cake Mix – Rolled in Powdered Sugar Before Baking
- Lemon Cake Mix – Sprinkled with Powdered Sugar

What You Need to Make Funfetti Cake Mix Cookies
- Funfetti Cake Mix
- 2 Eggs
- 1/2 cup Oil
How to Make Funfetti Cake Mix Cookies
- Preheat oven to 350 degrees. Line baking pan with parchment paper and set aside.
- In a large bowl, combine 1 box of Funfetti Cake Mix, 2 eggs, and 1/2 cup oil. Mix until well combined.
- Using a 1 inch scoop (or very heaping tbsp), place scoops of cookie dough evenly distributed onto prepared baking pan. (I fit about 9 scoops on a pan.) Sprinkle additional sprinkles on top of cookie dough before baking.
- Bake for 10 minutes.
- Remove from oven and let cool on pan before transferring to cooling rack.
Tips for Making and Storing Funfetti Cake Mix Cookies
- Try to sprinkle all over when sprinkling sprinkles on the top of the cookie dough. This will help cover the edges of the cookies when they bake out. Sprinkles will fall around the bottom edges of cookie dough while on the pan, that’s good! Then you will have good sprinkle coverage.
- Cake Mix Cookies are soft, so it’s best to store them stacked on top of each other so they keep their form.
