I am a bit of a neat freak.
I haven’t always been that way, though. As a kid and all the way through my teenage years I was a disaster. My bedroom floor was always covered in clothes that my mom threatened to bag up and get rid of! And when I finally got around to putting them away, it wasn’t done very neatly.
Regardless of my disastrous tenancies, I still aimed for perfectly straight lines. Somewhere over the course of my formative years, I developed the undesirable character trait of perfectionism; a nearly impossible curse to overcome.
I don’t want things to be perfect. It’s too much pressure, it’s unrealistic. As a matter of fact, my favorite recipes to make are the ones that don’t require any overthinking or a steady hand. Like these S’mores Graham Cracker Cookies! They are also known as ‘dunker’ cookies. I love the freedom of a recipe that’s supposed to be messy!
Baking with my son has been one of the most effective steps to overcome the desire for perfection. Which has helped me in so many other ares of my life! Kids don’t care if things are perfect. They don’t look at something and think it all the way through to the end to make sure it’s going to look good. They just get excited from the anticipation and process of making something and the pride of the final product! A child doesn’t worry about what other people think, they live in the moment of happiness with us.
I’ve wasted too many of my years worrying about what other people think, which is why I think I have to have everything perfect. Having a child-like spirit is a much simpler way to live! They don’t worry about yesterday, they don’t worry about tomorrow, they live for today and find joy in the little things!
This recipe is the perfect way to let your hair down with the kids in the kitchen and just have fun! S’mores are meant to be messy; the messier the better because that means you loaded them up with ooey-gooey marshmallows! And it’s super easy so it doesn’t require holding their attention for too long!

Ingredients for S’mores Graham Cracker Cookies
- Graham Crackers
- Regular Size Marshmallows
- Melted Chocolate
How to Make S’mores Graham Cracker Cookies
- Preheat oven to 350 degrees.
- Break Graham Crackers along the perforated lines, making rectangles. (24 pieces total)
- Lay 12 out on a parchment paper lined pan.
- Cut 12 regular size marshmallows in half. Place the halves on the Graham Cracker rectangle; 2 halves per cracker.
- Place the remaining 12 Graham Crackers over the marshmallows. Making a sandwich.
- Put pan in the oven for 4 minutes. Remove from the oven and press lightly on the top Graham Cracker for just a second so the marshmallows squish out of the crackers.
- Let cool. Dip ends in melted chocolate. Place back on the parchment paper lined pan and put in the refrigerator until the chocolate is firm.
How to Melt Chocolate
- Any chocolate works for dunking, but I prefer Hersey’s Milk Chocolate Chips.
- Put the desired amount of chocolate in a microwave safe bowl. If you aren’t sure how much chocolate to start with, just start with 1 cup and add if necessary.
- Microwave the chocolate for 30 seconds. Remove from microwave and stir. Place back in the microwave for 30. Remove from microwave and stir. Repeat until the chocolate is melted and smooth.
Tips for Making S’mores Graham Cracker Cookies
- These can be made ahead of time, but are best if eaten the same or next day. The marshmallows will start to get firm if stored for too long. Just make sure to keep them covered so the marshmallows don’t get stale.
- I like using Nabisco’s Honey Maid Graham Crackers that are already in squares for s’mores. Then you just have to break them in half! Some grocery stores sell the Graham Crackers already in sticks. I’d say keep it easy on yourself and grab those if you have them available to you!
- Any chocolate works for dunking, but I prefer Hersey’s Milk Chocolate Chips.
- You can use any size marshmallow you’d like! If you use small marshmallows, bake for 3 minutes instead of 4 minutes and check on them before you add another minute. If you use bigger marshmallows, start at 4 minutes and check on them before you add another minute.
Tips for Storing S’mores Graham Cracker Cookies
- Keep in a covered container for up to 3 days on the counter. Storing them in the refrigerator may make the marshmallows too firm.
