Boxed Lemon Cake Mix Cookies
If you’ve ever wanted to reach for an easy button in your kitchen, these Lemon Cake Mix Cookies are just that! Not to mention they are soft, chewy, and just the right amount of lemon in every bite!
Some people roll the dough in powdered sugar before baking, but I don’t have that kind of time and I don’t think it contributes any value to the cookies. It’s just a matter of personal choice!

What You’ll Need:
- 1 box Lemon Cake Mix
- 2 Eggs
- 1/2 cup Oil
How to Make Lemon Cake Mix Cookies
- Preheat oven to 350 degrees. Line a baking sheet with parchment paper and set aside.
- Combine 1 box of lemon cake mix, 2 eggs, and 1/2 cup oil and mix well.
- Scoop 1 inch balls and place onto the prepared pan.
- Bake for 10 minutes.
