Butter Pecan Cake Mix Cookies
My favorite ice cream flavor is Butter Pecan. If someone could make it normal to eat ice cream for every meal of the day, that would be great.
I’ve always just known the flavor to be simple with just a few pecans to liven it up. But then, we went to King Cone and I tried their award winning (literally) homemade version and it had swirls of caramel AND toffee bits in it! HEAVEN ON EARTH!! I could not believe how amazing it was! There is absolutely nothing that beats it.
Fast forward to my Mom introducing me to this recipe for Toffee Butter Pecan Cake Mix Cookies and I was in trouble, people! My all-time favorite ice cream now in cookie form. It’s really not fair that something this delicious is so easy to make! It literally takes just a few minutes with cake mix as the base. And every single bite is packed with toffee bits and perfectly placed pieces of pecans.

What You’ll Need:
- 1 box Butter Pecan Cake Mix
- 1/2 cup Butter, Softened
- 2 Eggs
- 1 tbsp Water
- 1 (8 oz) bag Heath English Toffee Bits
- 1/2 cup Pecans, Chopped
How to Make Toffee Butter Pecan Cake Mix Cookies
- Preheat oven to 350 degrees. Line a baking sheet with parchment paper and set aside.
- In a large bowl, beat together 1 box Butter Pecan Cake Mix, 1/2 cup softened butter, 2 eggs, and 1 tbsp water until well combined.
- Fold in 1 (8 oz) bag Heath English Toffee Bits and 1/2 cup chopped pecans.
- Scoop 1 1/2 tbsp size balls and place onto the prepared pan.
- Bake for 12 minutes.
