Frozen S’mores with Marshmallow Cream & Chocolate Pudding!
I have seen this recipe for Frozen S’mores circulating for a while now. I’ve always thought they were a genius idea, looked delicious, and sounded pretty easy to make. I kept saying I needed to try making them, but never made the time to.
As I was looking for inspiration for projects that my Grandma could work on these came to mind! We are quickly approaching summer time and these delicious ice cream sandwiches would be the perfect treat on a hot summer day!
The layers of chocolate pudding and marshmallow cream sandwiched between Graham Crackers taste just like a cold s’mores!
Why this Recipe Works:
- Balanced Layers – The recipe combines chocolate and marshmallow with crisp graham crackers, giving you a classic s’mores experience – even when frozen!
- Freezer Friendly Ingredients – The Cool Whip and pudding are designed to hold texture when chilled or frozen, preventing these from becoming rock-hard or icy.
- Structure Holds Together – The graham crackers act like a sandwich base, keeping everything layered and easy to slice.
Ingredients You’ll Need:
- 1 (5.9 oz) box Instant Chocolate Pudding Mix – Adds rich chocolate flavor and creates a smooth, creamy base when mixed with milk.
- 2 1/2 cups Whole Milk – Combines with the pudding mix to form the chocolate layer; full-fat milk makes it extra creamy.
- 2 + 1/2 cup Cool Whip (Thawed) – Lightens the texture of the filling, making it fluffy and easy to spread.
- 12 Graham Crackers (Broken in Half) – Serves as the ‘sandwich’ layers, giving structure and that classic ‘smores crunch.
- 5 oz Cream Cheese (Softened) – Adds a slight tang and richness while helping stabilize the marshmallow layer.
- 6 oz Marshmallow Cream (Little Less Than 1 Jar) – Provides the signature sweet, gooey marshmallow flavor of s’mores.
How to Make Frozen S’mores
- Line 9 x 13 pan with aluminum foil. Fold the edges over the sides.
- In a medium bowl, beat together 1 (5.9 oz) box instant chocolate pudding mix, 2 1/2 cups whole milk, and 1/2 cup Cool Whip until smooth and creamy.
- Lay half the Graham Cracker halves evenly on the bottom of the pan, with space in between each one. Spread the pudding mix evenly over the top and chill.
- In a separate bowl, beat 5 oz softened cream cheese and 6 oz marshmallow cream (little less than 1 jar) together until smooth. Fold in remaining 2 cups Cool Whip.
- Spread cream cheese mixture evenly over the chocolate layer. Place remaining Graham Crackers on top. Cover with aluminum foil.
- Freeze for 6 hours, or until firm enough to cut through.
- Slice through the layers, using the edges of the Graham Crackers as guides, and cut into sandwiches. Trim away any excess of the frozen filling.
My Best Tips:
- Use Full Fat Milk – This keeps the layers rich and prevents iciness when frozen.
- Let the Chocolate Pudding Thicken – Give it a few minutes after mixing so it spreads evenly.
- Freezing Tip – Freeze at least 6 hours; overnight is best. This ensures firm layers that cut cleanly.
- Cut While Still Firm – If the bars get too soft, the squares will be messy.
