Carrot Cake Mix Cookies with Cream Cheese Frosting
When our church closed during the pandemic I wanted to spread love to every church member I could possibly reach. My love language is baking. I know, it’s not technically one of the actual 5 love languages, but I added it as a 6th one! I decided I would bake cake mix cookies because I could make a lot of them in a short amount of time.
I got to baking as many flavors of cake mix cookies that I could find. Some of the variations that I made were Red Velvet Cake Mix Cookies, Funfetti Cake Mix Cookies, Mint Chocolate Cake Mix Cookies, and these Carrot Cake Mix Cookies. I had so much fun and felt so accomplished because I was able to mass produce a lot of different kind of cookies in a short amount of time!

What You’ll Need:
- 1 box Carrot Cake
- 2 Eggs
- 1/2 cup Oil
- Best Cream Cheese Frosting

How to Make Carrot Cake Mix Cookies
- Preheat oven to 350 degrees. Line a baking sheet with parchment paper and set aside.
- In a large bowl, mix together 1 box carrot cake mix, 2 eggs, and 1/2 cup oil.
- Scoop 2 tbsp size cookie dough balls and place onto prepared baking sheet, leaving room between the cookies.
- Bake for 10 minutes. Let cool while making the Best Cream Cheese Frosting. (Or, to save time use store bought cream cheese frosting.)
- Spread cream cheese frosting on the tops of the cookies.

Tips:
- Cinnamon – If you’d like, sprinkle a little cinnamon on top of the cream cheese frosting!
