A tried and true, easy to make family recipe for Homemade Caramels that everyone looks forward to at Christmas time!

Homemade Caramels with Heavy Cream
I am so thrilled with the new schedule I’ve made for myself. I’ve changed it more times than minutes in a day, but I think I’ve finally arrived to sustainable!
I have found that doing as much as I possibly can on Monday helps make room for interruptions and unexpected things the rest of the week. In other words, when I think I’ve planned ahead… I need to plan ahead farther. You know as well as I do that time flies. I blink and another day has passed! As soon as I started taking advantage of what I thought was extra time at the beginning of the week, it really aligned things nicely so I am not rushed and stressed at the end of the week.

What You’ll Need:
- 1 cup + 1 tbsp Butter
- 1 1/4 cups Sugar
- 1 1/4 cups Brown Sugar
- 1 cup Corn Syrup
- 1 cup + 1 cup Heavy Whipping Cream
- 1 tsp Vanilla

How to Make Homemade Caramels
- Line a 9 x 13 pan with aluminum foil. Use entire 1 tbsp butter to grease the foil.
- In a large, deep sauce pan over medium heat combine 1 cup butter, 1 1/4 cups sugar, 1 1/4 cups brown sugar, 1 cup corn syrup, and 1 cup heavy cream.
- Stir constantly until sugar is dissolved and butter is melted. Bring to a boil, but not a rolling boil. Slowly stir in additional 1 cup heavy cream.
- Cook without stirring until candy thermometer reads 240 degrees.
- Remove from heat and stir in 1 tsp vanilla.
- Pour into prepared pan. Do not scrape sides of the sauce pan where crystals have formed. Scraping bottom and partial sides to get remaining liquid is okay.
- Let stand until firm.
- Lift out of the pan and peel foil off. Cut into oblong pieces, wrap individually in waxed paper or candy foils, and twist ends to close.
