Easy Broccoli Apple Salad
My favorite way to have broccoli is in this Broccoli Apple Salad. My second favorite way is in this Vegan Broccoli Salad, which can also be made into a Broccoli Salad Wrap. And my family really enjoys it in Vegetarian Beef and Broccoli!
As a vegetarian, I should probably be better about eating my veggies. My problem is I like them swimming in butter like these Honey Garlic Butter Roasted Carrots or sprinkled on one of my all-time favorites – Veggie Pizza!
This creamy, crunchy salad goes well with Rice Krispie Vegetarian Meatballs, Vegetarian Pecan Patties, or Vegetarian Meatloaf! It’s also a pretty salad to serve for the holidays!
What You’ll Need:
- 4 cups Broccoli Florets
- 1/2 cup Carrots, Grated
- 1/4 cup Red Onion, Diced
- 2 large Apples, Chopped
- 1/2 cup Craisins
- 1/2 cup Pecan Halves
- 1/2 cup Mayonnaise
- 1/2 cup Greek Yogurt
- 2 tbsp Lemon Juice
- 1 tbsp Sugar
- 1/4 tsp Salt
How to Make Broccoli Apple Salad
- In a large bowl, combine 4 cups broccoli florets, 1/2 cup grated carrots, 1/4 cup diced red onions, 2 large chopped apples, 1/2 cup craisins, and 1/2 cup pecan halves.
- In a separate small bowl, whisk together 1/2 cup mayonnaise, 1/2 cup Greek yogurt, 2 tbsp lemon juice, 1 tbsp sugar, and 1/4 tsp salt. Pour over dry ingredients and mix together until well combined.
