Moist Cornbread Recipe
I try really hard not to paint my marriage as a fairy tale because it isn’t true. I never want to portray my life as perfect, it’s far from it. I’m living a real life in a real world! I am very happily married, but we certainly test each other’s patience at times. It’s all my husband’s fault, I’m a perfect angel. HA!
When he annoys me I try really hard to focus on the things I love about him. It’s easier said than done, but I’m getting better with practice. When he does something that makes me feel loved I file away that gesture to remember another day.
I recently rambled off a bazillion things I had to get done in a short amount of time, including cleaning the house. He’s been working really long hours so I didn’t want to ask him for help. It’s something we normally do as a family, but lately I’ve just been doing it myself.
I ran out of time to do it, and I was feeling defeated. My husband knows a clean house is important to me, so after getting up at 3:30am and working a long day he volunteered to vacuum. It was an act of love I’ll especially try to remember when he’s driving me crazy!
He loves this recipe for the Best Cornbread! And I love him, so I try to make things I know he looks forward to having for dinner after a long day at work. According to him, it’s the best he’s ever had! This cornbread goes best with a nice warm bowl of Vegetarian Chili. It also pairs nicely with a bowl of Vegetarian Beef Stew or Vegetarian Potato Corn Chowder!

What You’ll Need:
- 1 1/4 cup Flour
- 1 cup Yellow Corn Meal
- 2/3 cup Sugar
- 1 tsp Salt
- 1 tbsp Baking Powder
- 1 1/4 cup Milk
- 1/3 cup Canola Oil

How to Make the Best Cornbread
- Preheat oven to 400 degrees. Spray 8 x 8 pan with non-stick spray.
- In a medium size bowl, whisk together 1 1/4 cups flour, 1 cup yellow corn meal, 2/3 cup sugar, 1 tsp salt, and 1 tbsp baking powder.
- Pour in 1 1/4 cup milk and 1/3 cup canola oil. Whisk together until well combined.
- Transfer to prepared pan and spread evenly. Bake for 25-27 minutes. A toothpick inserted in the middle should come out clean.
Recipe Notes:
- Vegan – You can easily make this vegan by swapping the milk for almond/soy milk.
- Pan – You can use a 9-inch round cake pan in place of the 8 x 8 pan.
- Honey – My favorite way to enjoy cornbread is to slice it in half and drizzle it with honey!
