Mouth watering mashed potatoes packed with butter and garlic in every bite!
Roasted Garlic Mashed Red Potatoes
One of my favorite restaurants is Buca di Beppo. There isn’t one close to me so it’s rare that I get to eat there, which is probably a good thing! They had the best mashed potatoes, so perfectly made with tons of butter and garlic.
The last trip we made to eat there we ordered their signature potatoes only to hear they had been discontinued. I’ve been on a mission ever since to replicate them at home and finally, we nailed it with these Roasted Garlic Mashed Potatoes!
You have to really like garlic to appreciate these potatoes! If you are nervous about the amount of garlic, try making these Creamy Mashed Potatoes instead. You can complete any meal with just about any potato, Easy Garlic Knots, and Rice Krispie Vegetarian Meatballs!
What You’ll Need:
- 2 heads Garlic
- 2 tsp Olive Oil
- 5 lbs Red Potatoes
- 2 tsp Salt
- 12 tbsp Butter
- 1 1/2 cups Half & Half
How to Make Roasted Garlic Mashed Potatoes
- Preheat oven to 375 degrees.
- Roast the garlic by cutting 1/4 inch off the tops of 2 heads of garlic. Wrap them in foil and drizzle 1 tsp olive oil over each. Close the foil around the garlic and roast on a pan in the oven for 1 hour. This will make the garlic very soft and golden. You should be able to easily squeeze the garlic cloves out of the skin.
- Peel half of a 5 lb bag of red potatoes. Place all of the potatoes in a large pot and cover with cold water. Add 2 tsp salt and bring to a boil. Simmer for 15 minutes or until fork tender.
- Drain and return potatoes to the pot. Add roasted garlic cloves.
- In the microwave, warm 1 1/2 cups Half & Half with 12 tbsp butter until the butter is melted. Add to the pot of potatoes.
- Mash until milk and butter are incorporated and potatoes are creamy with some lumps. Add salt to taste.
