No Bake Haystack Cookies
Very few people know my husband well. He is a mystery to most. If you’ve ever spent any time with him, you know he’s actually a pretty funny guy! Most of the time it’s at my expense, but it’s hilarious!
For example, Capital One runs a commercial with a punchline of, “What’s in your wallet?” My husband recently answered that commercial out loud and said, “Nothing! My wife takes it all!” HA! We got a good laugh out of that. I probably shouldn’t have laughed though, because it’s true!
These cute little Haystack Cookies are not only cute and super easy to make, but it doesn’t cost much to make a lot of them! So if you need an idea for a classroom treat, a Fall Festival, or harvest picnic they would be perfect!

What You’ll Need:
- 4 cups Chow Mein Noodles
- 1 1/2 cups Butterscotch Chips
- 3/4 cup Peanut Butter
- Candy Pumpkins
How to Make Haystack Cookies
- Lay out parchment paper on the counter.
- Pour 4 cups Chow Mein noodles into a bowl.
- Over low heat in a small sauce pan, melt together 1 1/2 cups butterscotch chips and 3/4 cup peanut butter. Stir constantly until smooth and creamy.
- Pour mixture over the noodles and mix until well combined.
- Scoop small spoonful’s onto the parchment paper to create ‘haystacks.’
- Place a candy pumpkin next to each haystack.
- Let harden.
