Pecan Pie French Toast
We are approaching Mother’s Day, which means I turn one day into an entire weekend! My husband is a pretty good sport about it, although he does have a threshold for the number of hours we spend shopping for flowers!
Our tradition is to go out for brunch, but if we were to ever stay home then I would request this Pecan Pie Overnight French Toast! It is absolutely fantastic, and so easy to make. This recipe would work nicely for any holiday brunch!

What You’ll Need:
- 3/4 cup Whole Milk
- 3/4 cup Heavy Cream
- 6 Eggs + 3 Egg Yolks
- 2 tbsp Vanilla
- 1 loaf French Bread
- 6 tbsp Butter
- 1 cup Brown Sugar
- 1/3 cup Corn Syrup
- 1/4 cup Maple Syrup
- 1 cup Pecans, Chopped
How to Make Pecan Pie Overnight French Toast
- Slice thick pieces of French bread and lay down as many as you can fit into a 9 x 13 pan.
- In a medium bowl, whisk 3/4 cup whole milk, 3/4 cup heavy cream, 6 eggs, 3 egg yolks, and 2 tbsp vanilla. Pour evenly over the bread.
- Cover and refrigerate overnight.
- When ready to bake, preheat oven to 350 degrees.
- Melt 6 tbsp butter in a small sauce pan, stirring constantly until completely melted. Remove from heat and whisk in 1 cup brown sugar, 1/3 cup corn syrup, 1/4 cup maple syrup, and 1 cup chopped pecans until well combined.
- Spray a separate 9 x 13 pan with non-stick spray. Pour and spread pecan pie mixture evenly into the bottom of the pan.
- Transfer the soaked bread to the top of the mixture.
- Bake for 35 minutes.
- Let sit for a few minutes after removing from the oven to let the pecan pie mixture thicken.

This was delish! I actually threw it all in one pan the night before because I just wanted to wake up and pop it in the oven and it turned out great! I did everything else according to the recipe and I will definitely be making it again in the future.
