Toffee Cookie Bars with Sweetened Condensed Milk
I love reading! My favorite books to read are fiction Christian romance from the 1800’s. While they are fiction, they are an accurate description of that time period. The men worked outside of the home all day and the women stayed home to care for the children, the house, prepared the meals, and canned everything from their garden.
They lived hard, but simple lives. They were innovative, resourceful, and grateful for the little they had.
That time period is especially fascinating to me not because of their survival of hardships, but because of their neighborly and creative ways of living. They didn’t have much money so they traded what they could. And when someone new came to town, they were invited over to eat and sometimes stay with a family they just met.
In those days, it came naturally to assume positive intent and show kindness. They lived in communities where nobody asked for anything in return for a favor. Being kind and helping each other was their way of life. Even if it meant extending kindness would be an inconvenience to their family, they were willing to sacrifice for the sake of hospitality.
Fast forward a few hundred years and we are surrounded by entitlement, impatience, division, unkindness, and too much stuff. On the quest to making life easier, we’ve made it too easy and people can’t or won’t stop wanting more. While I don’t wish to be without electricity, I do wish for a simpler life!
Speaking of simple, these Toffee Bars are just that! They are easy to make and with a traditional shortbread crust they will surely please a crowd! Some other favorites are Buckeye Brownies and Peanut Butter Chocolate Chip Cookie Dough Bars!
What You’ll Need:
- 1/2 cup + 1 tbsp Butter, Softened
- 1/2 cup Brown Sugar
- 1 1/4 cups Flour
- 1/4 tsp Salt
- 1/4 cup + 3/4 cup Toffee Bits
- 1/3 cup Sweetened Condensed Milk
- 1 cup Chocolate Chips
How to Make Toffee Bars
- Preheat oven to 350 degrees. Spray 8 x 8 baking dish with non-stick spray and set aside.
- Beat 1/2 cup softened butter and 1/2 cup packed brown sugar together until smooth. Add 1 1/4 cup flour and 1/4 tsp salt until combined. The mixture will be crumbly, but should hold together if you press it between your fingers.
- Evenly press the mixture into the prepared pan and bake for 15 minutes.
- Remove from oven and sprinkle 1/4 cup toffee bits evenly over the crust.
- Then combine 1/3 cup sweetened condensed milk and 1 tbsp melted butter together and pour evenly over the toffee bits.
- Return to the oven and bake for another 7-10 minutes, until the mixture is bubbling.
- Remove from the oven and sprinkle 1 cup chocolate chips over the top. Wait 3-5 minutes for the chocolate chips to soften, then gently spread the chocolate out evenly.
- Immediately top with remaining 3/4 cup toffee bits.
Recipe Notes:
- Spreading the Chocolate – Be careful not to push down too hard when spreading the melted chocolate. You don’t want to disturb the toffee layer underneath. Just gently spread the melted chocolate out evenly.
- Sea Salt – You can sprinkle a little flaky sea salt on top of the bars at the very end if desired.
