Patriotic Ice Cream Cookie Sandwiches
I am just getting back into the swing of things after being at Wisconsin Camp Meeting for 10 days! Every year I come back absolutely exhausted… but recharged. We always have SO MUCH FUN with friends and family!
For those of you who know what Camp Meeting is, you get it. But for those of you who don’t, it is a place set apart at beautiful Camp Wakonda. Our week is filled with speakers on faith, family, marriage, parenting, prayer, health, and spirituality! We are blessed with all sorts of music, too.
Everything is outside and the reception is terrible, so we spend the entire week in nature and unplugged. We stay up late, talk, walk, laugh, and cry. What a gift the entire experience is!! The kids have all sorts of fun from swimming and games to recreation and ice cream!
I know you are here for recipes, but sometimes I can’t help but share my faith with you. God has been my rock, He is my hope. I want that for you, too, so I must invite you to listen to one of my favorite speakers.

What You’ll Need:
- 3/4 cup Butter, Softened
- 1 cup Brown Sugar
- 1/2 cup Sugar
- 1 Egg
- 1/2 tbsp Vanilla
- 2 1/2 cups Flour
- 2 tsp Corn Starch
- 1 tsp Baking Soda
- 1 cup Chocolate Chips
- 1 cup Red, White & Blue M&M’s
- Vanilla Ice Cream
- Red, White & Blue Sprinkles
How to Make 4th of July Ice Cream Cookie Sandwiches
- Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
- Cream together 3/4 cup softened butter, 1 cup brown sugar, and 1/2 cup sugar. Beat in 1 egg and 1/2 tbsp vanilla until fully combined.
- In a separate bowl, whisk together 2 1/2 cups flour, 2 tsp corn starch, and 1 tbsp baking soda.
- Gradually add the dry ingredients into the wet ingredients and mix until you’ve reached cookie dough consistency.
- Fold in 1 cup chocolate chips.
- Scoop 2 tbsp size cookie dough balls and place onto prepared baking sheet, leaving room between the cookies. Bake for 10-12 minutes.
- As soon as you remove from the oven, press in M&M’s and additional chocolate chips into the tops of the cookies.
- Once completely cooled, sandwich vanilla ice cream between two cookies. Then roll edges into red, white, and blue sprinkles.
