Chocolate Chickpea Truffles
I have a love/hate relationship with social media. One minute I love it because that’s how I find so many good recipes, like these Chocolate Chickpea Balls. I would have never known about these had Lovely Delites not posted a reel of them. But the next minute social media makes me feel like I am completely failing at life. I am up and down and all over the place with how I feel after scrolling.
This is by far one of my favorite healthy recipes, mostly because it doesn’t taste healthy! They taste like a brownie, the chickpeas are sneaky. Some of my other favorite must-try healthy recipes are Cucumber Avocado Salsa, Vegan Broccoli Salad, and Sweet Potato and Black Bean Tacos!
What You’ll Need:
- 1 (13.5 oz) can Chickpeas, Drained & Rinsed
- 1/2 cup Almond Butter
- 2 cups Vegan Chocolate Chips, Divided
How to Make Chickpea Chocolate Balls
- Line a baking pan with parchment paper and set aside.
- Drain and rinse 1 (13.5 oz) can of chickpeas and add to a food processor.
- Add 1/2 cup almond butter to the food processor.
- Then melt 1 cup vegan chocolate chips in the microwave in 30 second intervals, stirring the chocolate at each interval until completely smooth and melted. Pour into the food processor.
- Blend until ingredients are well incorporated.
- Using a 1 inch cookie scoop, place scoops of dough on the parchment paper. Place pan in the freezer for 15 minutes.
- Remove from the freezer and roll into balls. Place back in the freezer for 10 minutes.
- Melt remaining 1 cup vegan chocolate chips in the microwave in 30 second intervals, stirring the chocolate at each interval until completely smooth and melted.
- Remove balls from the freezer and dunk into the melted chocolate. Tap off any access chocolate and place back onto the parchment paper. Let chocolate harden.
Recipe Notes:
- Chocolate – You don’t have to use vegan chocolate, any melted chocolate works.
- Coating – I think these taste good without the chocolate coating!
- Nut butter – You can use any nut butter in place of the almond butter.
