Healthy Chocolate Peanut Butter Oatmeal Bars
I once found a recipe for black bean brownie bites that was accompanied by a picture that had me convinced I was going to be hiding in the laundry room licking the bowl. But as all good bakers do, I performed quality control on the black bean based batter before I baked them.
The batter was quite possibly the most bitter thing I had ever tasted. It was so bad that every time I think about it I can feel my lips curling and my eyebrows crouching.
After my failed attempt I turned to my favorite recipe resource – my Grandma! She gave me this recipe for No Bake Chocolate Peanut Butter Oat Bars. They aren’t brownies, but they are in the shape of a brownie. So that counts, right?!

What You’ll Need:
- 2 cups Old Fashioned Oats
- 1 1/2 cups Vegan Chocolate Chips
- 1 cup Peanut Butter
- 2/3 cup Honey
- 1/2 cup Coconut Oil
How to Make No Bake Chocolate Peanut Butter Oat Bars
- Mix 2 cups old fashioned oats and 1 1/2 cups vegan chocolate chips together in a bowl. Set aside.
- Combine 1 cup peanut butter, 2/3 cup honey, and 1/2 cup coconut oil in a sauce pan and place over low heat. Stir until completely melted.
- Remove from heat and pour into oats/chocolate chip mixture.
- Stir until well combined and the chocolate is melted. Pour into 9 x 9 parchment paper lined pan and spread evenly.
- Chill in the refrigerator until firm. Cut once firm.
Recipe Notes:
- Thickness – For thick bars, like pictured, use a 9 x 9 pan. For thin bars, use a 9 x 13 pan.
- Size – You can cut them any size you’d like, big or small.
- Chocolate chips – You don’t have to use vegan chocolate chips, regular work just fine!
- Parchment paper – You don’t have to line the pan with parchment paper, it just makes it easier to pull out and cut.
- Muffin pan – You can also line a muffin pan with non-stick liners and fill them with the mixture for individual cups.
