Scotcheroo Bird Nest Treats
We’ve had the strangest winter weather. I’ve worn flip flops more than I’ve worn boots, and I live in Central Wisconsin where some winters have made us feel like we live in Antarctica! One day the sun is shining bright and I have my windows open and other days I wear wooly socks and snuggle in with a good book. One thing is for sure, Spring is coming which means Easter is near!
These Scotcheroo Bird Nest Bites are the perfect little bite size treat to make with your kids! It’s fun to put the eggs in the nest! Everyone loves classic Scotcheroos and Chex Scotcheroos, so they will certainly love these too!
What You’ll Need:
- 1 cup Corn Syrup
- 1 cup Peanut Butter
- 1/3 cup Sugar
- 6 cups Rice Krispies Cereal
- 2/3 cup Chocolate Chips
- 2/3 cup Butterscotch Chips
- Chocolate Egg Candy
How to Make Scotcheroo Bird Nest Bites
- Spray a mini-muffin pan with non-stick spray and set aside.
- Combine 1 corn syrup, 1 cup peanut butter, and 1/3 cup sugar in a sauce pan and melt together over low heat and stir until just warm, not hot.
- Remove from the heat and pour 6 cups Rice Krispies cereal into the pan and mix until well combined.
- Spoon mixture into each mini-cup filling to the top. Then press the back of a 1 tsp measuring spoon into the center of the nests.
- Let sit for 10-15 minutes to harden. Then remove from the pan and make more nests with the remaining mixture. Let harden and remove from the pan.
- Combine 2/3 cup chocolate chips and 2/3 cup butterscotch chips in a sauce pan over low heat. Stir frequently until smooth and melted. Distribute melted mixture between the center of each nest. Immediately press chocolate candy eggs into the mixture and let harden.
Pro Tip: When you heat the corn syrup and sugar together just heat it until warm, it doesn’t need to be hot. It only needs to be warm enough to mix together until smooth and melt the peanut butter when you stir it in.
