Pumpkin Bars with Yellow Cake Mix
Some food bloggers spend an enormous amount of time typing out very detailed recipes. With every good intention they want their readers to have as much information as possible to ensure success at making their recipes.
I have a very different style of recipe writing. I like to keep it simple. In my own recipe book I have the bare minimum. What You’ll Need:
- 1 box Yellow Cake Mix
- 1/2 cup Butter, Melted + 1/4 cup Softened
- 3 Eggs
- 1 (29 oz) can Pumpkin Pie Mix
- 2/3 cup Sweetened Condensed Milk
- 1/4 cup Sugar
- 1 tsp Cinnamon
How to Make Pumpkin Pie Cake Bars
- Preheat oven to 350 degrees. Spray 9 x 13 pan with non-stick spray and set aside.
- Remove 1 cup yellow cake mix from the boxed mix and set aside.
- In a bowl, combine remaining yellow cake mix, 1/2 cup melted butter, and 1 egg. Press evenly into the bottom of the pan.
- In the same bowl, combine 1 (29 oz) can pumpkin pie mix, 2/3 cup sweetened condensed milk, and 2 eggs. Spread over the bottom layer evenly.
- In the same bowl again, combine the reserved 1 cup yellow cake mix, 1/4 cup sugar, 1/4 cup softened butter, and 1 tsp cinnamon.
- Mix together and sprinkle over the top.
- Bake for 50-60 minutes.
