Fruit Pizza Sugar Cookie Bars
Last summer was very overwhelming for me. Because it was so busy it just flew by and I felt like we didn’t get a refreshing summer break.
Fast forward to this summer, and it’s been the best summer ever! We have lots of hot days, fireworks, countless pool days, sleeping in, good times with friends and family, bountiful produce at the farmers markets, relaxing game nights on the deck, and just good feels every single day!
These Sugar Cookie Fruit Pizza Bars are the perfect summer dessert! If you love baking with fresh fruit as much as I do, then I think you’ll really enjoy Easy Blueberry Crisp, Peach Cobbler, and Strawberry Shortcake, too!

What You’ll Need for the Crust:
- 1 cup Butter, Softened
- 1 cup Sugar
- 1 Egg
- 2 tsp Vanilla
- 2 1/4 cups Flour
- 1 1/2 tsp Baking Powder
- 1/2 tsp Salt
The Cream Cheese Frosting:
- 1 (8 oz) Cream Cheese, Softened
- 1/2 cup Butter, Softened
- 1 cup Powdered Sugar
- 1 tsp Vanilla
And the Fruit Topping:
- Fruit of Choice
- 1 tbsp Apricot Jam
- 2 tsp Water

How to Make Fruit Pizza Sugar Cookie Bars
- Preheat oven to 350 degrees. Spray 9 x 13 pan with non-stick spray.
- In a large bowl, cream together 1 cup softened butter and 1 cup sugar.
- Mix in 1 egg and 2 tsp vanilla.
- In a separate bowl, whisk together 2 1/4 cups flour, 1 1/2 tsp baking powder, and 1/2 tsp salt.
- Slowly beat the dry ingredients into the wet ingredients until just combined.
- Press mixture into the prepared pan evenly.
- Bake for 14-16 minutes.
- Allow crust to cool completely.
- Make the cream cheese frosting by beating together 1 (8 oz) softened cream cheese and 1/2 cup softened butter. Then beat in 1 cup powdered sugar and 1 tsp vanilla until smooth and creamy.
- Spread evenly over the crust.
- Clean and cut desired fruit and place over the frosting.
- Heat 1 tbsp apricot jam in the microwave for 15 seconds. Whisk in 2 tsp water. Gently brush over the tops of the fruit.
