Zucchini hidden in a rich chocolatey fudgy cookie that tastes like a brownie, packed with chocolate chips!
Soft Zucchini Cookies
Summer is right around the corner! Which means the Farmer’s Market is going to be in full swing and every vendor is going to have zucchini piled high on their tables!
I don’t think I have ever actually made anything healthy with zucchini! Oops. I’ve turned it into Mini Zucchini Donut Muffins, Cinnamon Zucchini Cake, Zucchini Cream Cheese Muffins, Zucchini Brownies, and these Chocolate Zucchini Cookies!
What You’ll Need:
- 1 1/4 cups Flour
- 1/3 cup Cocoa Powder
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 6 tbsp Butter, Melted
- 3/4 cup Brown Sugar
- 1 Egg
- 1 tsp Vanilla
- 1 cup Grated Zucchini
- 1 cup Chocolate Chips
How to Make Chocolate Zucchini Cookies
- Preheat oven to 350 degrees. Line a baking sheet with parchment paper and set aside.
- Grate 1 cup of zucchini and set aside.
- In a small bowl, mix 1 1/4 cup flour, 1/3 cup cocoa powder, 1/2 tsp baking soda, and 1/2 tsp salt until well combined.
- In a large bowl, mix together 6 tbsp melted butter and 3/4 cup brown sugar. Mix in 1 egg and 1 tsp vanilla until well combined.
- Add dry ingredients to the large bowl and mix until just combined.
- Pour in 1 cup grated zucchini and mix until you have the consistency of brownie batter. Fold in 1 cup chocolate chips.
- Using a 1 inch scoop, evenly distribute cookie dough balls onto the parchment paper lined pan and bake for 10-12 minutes.
- Remove from oven. Press additional chocolate chips into the tops of the cookies and let cool.
Recipe Notes:
- Freeze – These freeze well in a freezer safe bag.
- Vegan – You can easily make these vegan by swapping the butter for vegan butter and the egg for 1/4 cup non-dairy vanilla yogurt.
