Pillsbury Sugar Cookie Cups with Lemon
My husband and I keep a running list of the things we’d like to improve around our house each Spring. Some years we take on big improvements, but sometimes we take on small ones and invest in other things that need to be replaced. This Spring we decided to buy a new lawn mower.
I was looking at used ones and my husband had big dreams of buying a brand new zero turn. I didn’t see how that was possible because there are other things on our list of improvements we need to pay for. Have you seen the price of those things?! It’s absurd!! He knew the budget and was determined to find his dream lawnmower within his limit. I thought his dream was impossible, and I’m a dreamer myself!
He scoured the Internet for what seemed like an eternity. He came across a locally owned business we had never heard of. Turns out they’ve been around a very long time and have a great reputation! My husband found one on their website that had cosmetic damage from shipping. The seat had been torn about 2 inches long and there were some scratches that I didn’t even notice until they pointed them out. They fixed the tear and were offering $1,000 off the mower! We ended up getting the mower, the blades, and oil for exactly the amount we budgeted for!
I was so shocked and so happy for my husband! We never have anything that stays cosmetically perfect anyway. Something always happens!
Speaking of cosmetically perfect, I highly recommend using liners in your muffin pan when you make these Lemon Sugar Cookie Cups. I’ve tried making them with non-stick spray instead several times and the cookies don’t come out clean.

What You’ll Need:
- 24 count Pillsbury Sugar Cookie Dough
- 1 (21 oz) can Lemon Pie Filling
- Raspberries for Garnish, Optional

How to Make Lemon Sugar Cookie Cups
- Preheat oven to 350 degrees. Line a 24 cup mini-muffin pan with liners.
- Let cookie dough sit at room temperature for 5-10 minutes.
- Roll into balls and distribute into liners.
- Bake for 14-15 minutes.
- Remove from oven and immediately press the back of a 1 tsp measuring spoon into the centers of the cookie cups.
- Let cool.
- Once cooled, put dollops of lemon pie filling into the center of each cookie.
- Garnish with raspberries and/or powdered sugar if desired.

Recipe Notes:
- Liners – I have tried making these using non-stick spread instead of the liners and it was a mess. The cookies don’t come out clean. I highly recommend using liners.

These remind me of thumbprints cookies-so yummy! I’ve never thought of lemon-but it’s a favorite dessert flavor!! Thank you!
