Best Chickpea Tuna Salad Recipe
I have always been finicky eater. I used to assume I wouldn’t like something, especially healthy stuff, without even trying it. So I stuck to the boring stuff I knew I would like. I had a pretty bland diet, which consisted of a lot of processed foods, sugar, starch, and carbs.
In my quest to eat healthier, I decided I wasn’t going to assume I didn’t like things I hadn’t tried yet. I cannot believe that I have actually followed through on trying the ‘weird stuff,’ AND I have liked most of it! For example, the old me would have never tried Cucumber Avocado Salsa but I did and it’s my favorite salsa now!
So, before you put Chickpea Mock Tuna on the ‘weird not trying list,’ try it! It’s so good and filling! You can put it on a croissant, regular sandwich bread, put it open face on a toasted English muffin, or use it as a dip with crackers! Works great for packed lunches, too. My husband likes to add a slice of cheese to it.
