A creamy cheesy-like sauce that can be used on broccoli, baked potatoes, pasta noodles, or as a chip dip!

Vegan Cheese Sauce with Nutritional Yeast
I have been noticing that I am having to pull things away from my eyes to read them. Going to bed early is never early enough. And, to make matters worse, there is chatter amongst my High School classmates making plans for our 25th reunion! I’ve refused to age my whole life, I’m not about to start now! Help!
You know who doesn’t age? My Grandma! She will out live all of us. Her diet is one of the main reasons she is aging so gracefully! She keeps all of us stocked with this Easy Vegan Cheese Sauce and we love her for it!
My son doesn’t like cheese because he grew up eating this stuff. My nephew will eat gallons of it, using it to dunk crackers in! Keep in mind, this recipe doesn’t taste like cheese it only acts like it. You can use it any way you’d like – we love it on Vegetarian Taco Baked Potatoes! You could also dunk Easy Homemade Soft Pretzels or Garlic Ranch Crackers in it, too!

What You’ll Need:
- 1 cup Hot Water
- 1/2 cup Raw Cashews or Raw Almonds, Blanched
- 1/2 cup Pimento, Including Liquid
- 3 tbsp Lemon Juice
- 2 tsp Salt
- 1/3 cup Nutritional Yeast Flakes
- 1 small Potato (Peeled, Cubed, Cooked & Hot)
- 1 1/2 cup Millet or Rice (Cooked & Hot)

How to Make Easy Vegan Cheese Sauce
- In a small sauce pan, boil 1 small potato (peeled & cubed) over high heat. The potato is ready when a fork easily slides in and out of the potato.
- In a separate small sauce pan, cook 1 1/2 cup millet or rice.
- While the potato and millet/rice are still hot, blend 1 cup hot water and 1/2 cup raw cashews or blanched raw almonds in a Vitamix.
- Add the following ingredients one at a time, blending between each one: 1/2 cup pimento including liquid, 3 tbsp lemon juice, 2 tsp salt, 1/3 cup nutritional yeast flakes, hot potato, and hot cooked millet/rice.
- You should have a small swirl on top when done. If it’s too thick, you can thin it with hot water until you reach the desired consistency. It will thicken as it cools.

- Vitamix – A blender would work, but I recommend a Vitamix because it will give you a smooth, creamy texture.
