Simple Egg Salad Recipe
I have never actually measured the amount of mayonnaise I use to make Egg Salad for sandwiches! I always just eyeball it. Putting this recipe together for you was the first time I actually measured!
I grew up eating these sandwiches, usually for picnics and road trips! Except my Mom used Miracle Whip instead of mayonnaise. We will forever debate which is better!

What You’ll Need:
- 1 dozen Eggs, Hardboiled & Peeled
- 1 tbsp Baking Soda
- 1/2 – 1 cup Mayonnaise
- Salt to Taste
- Bread

How to Make Egg Salad Sandwiches
- Fill a large sauce pan with water and bring to a rolling boil.
- Once reached, add 1 dozen eggs and 1 tbsp baking soda. The water should just cover the eggs.
- Boil the eggs for 15 minutes.
- Drain water and place eggs in a large bowl over ice. Cover with cold water. Let sit for 1 hour. You may need to refresh the water so it’s cold.
- When ready to make the egg salad, peel the eggs and place into a bowl. Make sure any water is drained from rinsing the egg shells off the eggs so the eggs are dry. Mash with a pastry cutter.
- Add 1/2 cup mayonnaise and mix until creamy and well combined. Add additional mayonnaise to preferred texture.
- Add salt to taste.
