Carrot Cake Whoopie Pies Using Cake Mix
My husband and son are like two peas in a pod. They are so close and do just about everything together. My husband doesn’t even run errands without pouting to get our son to go along. It’s so cute! Lately they have been playing a lot of pool together. Every time I have something going on and need to leave them home, they use it as an opportunity to go shoot pool.
They go together like Carrot Cake & Cream Cheese Frosting. You just can’t have one without the other! That’s what makes these Carrot Cake Mix Whoopie Pies so delicious!
What You’ll Need:
- 1 box Carrot Cake
- 2 Eggs
- 1/2 cup Oil
- Best Cream Cheese Frosting (Or 1 container store bought frosting)
How to Make Carrot Cake Mix Whoopie Pies
- Preheat oven to 350 degrees. Line a baking sheet with parchment paper and set aside.
- In a large bowl, mix together 1 box carrot cake mix, 2 eggs, and 1/2 cup oil.
- Scoop 2 tbsp size cookie dough balls and place onto prepared baking sheet, leaving room between the cookies.
- Bake for 10 minutes. Let cool while making the Best Cream Cheese Frosting. (Or, to save time use store bought cream cheese frosting.)
- Spread cream cheese frosting on the inside of one cookie, and press another cookie on top making a whoopie pie.
Recipe Notes:
- Frosting – You can easily save time by using store bought cream cheese frosting, instead of homemade.
