Homemade Crunchwrap Supreme
It is possible to eat normal, feel full, and lose weight. The secrets? First, add fiber and/or plant based protein (black beans) so you eat less and second, leave out the fluff. (See ‘Healthier Alternative’s below) I consider the fluff to be stuff that doesn’t add any value, like cheese and sour cream. If you can’t fathom Taco Tuesday without cheese or sour cream, then just cut back on the amount you use.
Third, swap where you can. I use a high fiber, high protein tortilla shell versus a flour tortilla.
I was recently reminiscing with a friend of mine about the ‘good old days’ of standing in front of our boom boxes for what seemed like forever until our favorite songs came over the radio. We’d have our cassettes ready in the player to record… and then the DJ would talk over our song and we’d have to wait for the next time they played it to record it!
Then CD’s came out. Then the iPod. Things just keep evolving!
Sometimes it’s easier to just be stagnant in our habits instead of accepting something new. But isn’t the definition of insanity doing the same thing over and over and expecting different results?! I’m familiar with being insane! We know we like Crunchwrap Supreme’s from Taco Bell, we know exactly how we want it and to deviate from that causes great anxiety because what if we waste money on something we don’t like?!
BUT… what if you DO like the changes you make to it?! Gasp! Be opened minded about trying new things! There are so many different foods and ideas to try!
Like Peanut Butter & Jelly Hot Dogs, Homemade Pizza Pockets, or Apple Pie Enchilada’s!
What You’ll Need:
- 1 bag Morningstar Griller Crumbles
- 1 packet Taco Seasoning
- 6 Burrito Size Flour Tortilla’s
- 6 Street Taco Size Flour Tortilla’s
- 6 Tostada Shells
- Refried Beans
- Shredded Cheese
- Shredded Lettuce
- Diced Tomato
- Sour Cream
How to Make a Copycat Taco Bell Crunchwrap Supreme
- Prepare 1 bag of Morningstar Griller Crumbles by frying with a little oil and 1 packet taco seasoning until golden brown. Remove from heat.
- Warm a non-stick skillet to medium heat over the stove top.
- Lay ingredients in assembly line form on the counter in this order: burrito size flour tortillas, refried beans, tostadas, browned crumbles, cheese, sour cream, diced tomatoes, shredded lettuce, and street taco size flour tortillas.
- Then layer in that order. Lay out a burrito size flour tortilla, spread the center of it with refried beans and lay a tostada on top. Sprinkle with browned crumbles and toppings.
- Place a street taco size flour tortilla on top and hold in place while folding over all sides of the burrito size flour tortilla in to enclose all of the ingredients.
- Put folded side down on the warm skillet first to brown, for 1-2 minutes. Check it half way to make sure you don’t burn it.
- Flip and brown the other side. Remove from heat and serve!
Healthier Alternatives
- Tortilla – Swap the flour tortilla for a high fiber, high protein tortilla instead.
- Cheese – I like to swap the shredded cheese for the Best Vegan Nacho Cheese Sauce. Note: Make this ahead of time, don’t make it at dinner time.
- Sour cream – Skip the sour cream, the cheese sauce makes it creamy enough!
- Black beans – Load it up with black beans!
- Avocado – Add good fat, like diced avocado’s!
Recipe Notes:
- Tortilla shells – I suggest the two sizes of tortilla shells because the smaller one covers what the larger one can’t and allows room for the larger one to overlap the smaller one keeping everything inside. If you find a tortilla shell larger than burrito size, you might get lucky and not have to use the smaller size, too!
- Refried beans – Make sure to get ‘fat free’ or ‘vegetarian’ refried beans. The other options have lard in them.
- Griller crumbles – These are just a substitute for the meat. You can easily leave this out if you want.
- Lettuce – The lettuce pictured is garden fresh lettuce, so it’s more delicate and wilty. Use store bought shredded lettuce if you prefer a firmer textured lettuce.
- Dressing – You can easily swap the sour cream for Ranch or guacomole.
- Serving size – Just eyeball the amounts you use, and use what you have. I listed a serving size of 6 because it keeps Google happy!
- Make ahead – If you want to make these ahead, leave out the lettuce.
