Easy Lemon Poppy Seed Muffins

My Mom always makes these Lemon Poppy Seed Muffins with Cake Mix, except as mini muffins, for things like Baby Showers, Bridal Showers, church events, brunches, etc. They are such a nice, light, lemony muffin and the best part is they are super easy to make with a cake mix!

I’ve been trying to get more out of the recipes I share, so while I was working with these I decided to turn them into Lemon Poppy Seed Cupcakes!

What You’ll Need:

• 1 box Yellow Cake Mix
• 1 (3.4 oz) box Instant Lemon Pudding Mix
• 1/2 cup Oil
• 4 Eggs
• 1/4 cup Poppy Seeds
• 1 cup Hot Water

How to Make Lemon Poppy Seed Muffins with Cake Mix

• Preheat oven to 350 degrees. Line a muffin pan with liners.
• Beat together 1 box lemon cake mix, 1 (3.4 oz) box instant lemon pudding mix, 1/2 cup oil, 4 eggs, 1/4 cup poppy seeds, and 1 cup hot water until well combined.
• Fill muffin liners until almost full.
• Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean. Moist crumbs are okay, you don’t want to over bake the muffins.
