Best Vegan Cheese Sauce Recipe
When I first started blogging, I used my really old cell phone to take pictures of the food. I would wait until my son went to bed, and after working all day go downstairs in the dark and do my best to take decent pictures. Every single time I was so discouraged with the outcome. They were terrible.
I knew I needed a nice camera, but they are expensive. So I waited for almost a year hoping there would a Black Friday sale on one. And sure enough, Kohl’s was advertising a deal I just couldn’t refuse. I FINALLY had a really nice camera!
I was so excited to start using it! I had told myself for months that a new camera would fix all of my photography woes, and now the time had finally come where I would have much better pictures. I couldn’t wait to use it! I set everything up to take my first pictures with it and… the only thing that improved was the clarity of them! They STILL weren’t great!
I put all of my faith in the camera fixing my problems, instead of myself. I realized I had sooooo much to learn. So that’s what I started doing. I’ve spent the past couple of years researching, reading, watching videos, watching other people, learning from my mistakes, and practicing. I am still not always satisfied with the outcome, but I am a whole lot happier with them today then when I started years ago.
The lesson here? I admitted I was the problem and was willing to correct it with a lifetime of learning, growing, and evolving. This applies to everything in your life. Nobody can change what you want changed for you. My trainer can’t help me if I don’t show up to the gym. I’m going to eat out for lunch if I don’t pack one. And I will make poor lifestyle choices if I stay up too late.
Accountability is hard, but it works.

What You’ll Need:
- 1 cup Raw Cashews (soaked for 10 minutes in hot water & drained)
- 13.5 oz can of Coconut Milk
- 1 cup Water
- 2 1/2 tsp Salt
- Juice from Half of Lemon
- 1/4 cup Pimentos
- 1/2 cup Nutritional Yeast
- 1/4 cup Corn Starch
How to Make the Best Vegan Nacho Cheese Sauce
- Soak 1 cup raw cashews for 10 minutes in hot water. Drain.
- Combine 1 cup soaked and drained raw cashews, 13.5 oz can of coconut milk, 1 cup water, 2 1/2 tsp salt, juice from half of a lemon, 1/4 cup pimentos, 1/2 cup nutritional yeast, and 1/4 cup corn starch in a Vitamix and blend for a few minutes.
- You’ll notice the sauce starts to thicken. Once it’s thickened, it’s done!
Recipe Notes:
- Soaking cashews – Do not skip soaking the cashews. This softens the cashews and makes them easier to blend, which helps to make the cheese creamy.
- Blending – It’s recommended to use a Vitamix, but you can use a regular blender. Just make sure to blend on high for 3-4 minutes; then transfer to a saucepan over medium heat to thicken while stirring constantly.
- Let cool – The sauce gets hot in the blender, so don’t remove the lid immediately. Let cool down for a few minutes before removing the lid.
- Storing – The sauce will keep in the refrigerator up to a week in a sealed container.
How to Use Cheese Sauce:
- Drip over nachos
- Dunk your chips in it
- Use it in a Taco Salad Bowl or Copycat Taco Bell Crunchwrap Supreme
- Dip your crackers in it
- Stir salsa into it and dip tortilla chips in
- Drizzle over your steamed veggies
- Dunk your raw veggies in it
- Stir it into cooked noodles to make Vegan Mac & Cheese
