A vegan variation of the much loved Special K Cottage Cheese Loaf. This is a traditional Seventh-day Adventist recipe!
Seventh-day Adventist Vegan Special K Loaf
The Special K Cottage Cheese Loaf is a very familiar recipe among Seventh-day Adventists. I’ve been asked to share a vegan version of that much loved recipe! You can’t even tell this recipe is vegan, it’s that good!
This loaf, and pretty much every variation of it, can be found at our church potlucks. I grew up with this casserole, it’s a staple! Many Adventist’s will tell you it’s their favorite dish.
To complete your meal, you can serve Air Fryer Vegetables, Vegan Scalloped Potatoes, or Vegan Broccoli Salad with it. And for dessert you can have Vegan Peanut Butter Banana Brownies or 2-Ingredient Vegan Fudge!
What You’ll Need:
- 1 large Onion, Diced & Sauteed
- 2 (14 oz) packages Extra Firm Water Packed Tofu, Drained & Crumbled
- 2/3 cup Quick Oats
- 1/4 cup Bragg’s Aminos
- 2 tbsp Flour, Heaping
- 3 tbsp McKay’s Chicken Seasoning
- 1 cup Pecan Meal
- 1/4 cup Oil
- 2 tbsp Lemon Juice
- 2 tbsp Corn Starch, Heaping
- 6 cups Special K Cereal
How to Make Vegan Special K Loaf
- Preheat oven to 350 degrees. Spray 9 x 13 pan with non-stick spray and set aside.
- Sauté 1 large diced onion in vegan butter until onions are translucent.
- In the meantime drain 2 (14 oz) packages Extra Firm water packed tofu. Crumble to look like cottage cheese into a large bowl. Add 2/3 cup quick oats, 1/4 cup Bragg’s Aminos, 2 heaping tbsp flour, 3 tbsp McKay’s chicken seasoning, 1 cup pecan meal, 1/4 cup oil, 2 tbsp lemon juice, 2 heaping tbsp corn starch, and 6 cups Special K cereal into the same bowl. Stir in onions when ready.
- Mix together well. Press firmly into the prepared pan.
- Bake for 45-60 minutes. The top should be golden brown, but not over done.
Recipe Notes:
- Freeze – This loaf freezes nicely covered in a freezer safe container.
