Easy Potato Corn Chowder
I live in Central Wisconsin where the winters are beautiful, but bitterly cold. We stay warm by snuggling under heavy blankets, sipping on gallons of Hot Cocoa, and eating bowls of hearty soup like this Vegetarian Potato Corn Chowder!
It’s no secret I love clothes. During the cold months I wear leggings and sweatshirts every day. I like variety so I just couldn’t resist getting a Def Leppard sweatshirt from Maurices that said, “Pour some sugar on me!” Clearly, someone who bakes just about every single day needs that shirt.
My son didn’t know I had it. He just about died of shock when he saw me wearing it! I’m pretty conservative with what I allow him to watch and listen to, so you can imagine his response! Right away he asked Alexa to play the song. He was on top of the world – Mom had finally let loose! HA! If only he knew me before him…

What You’ll Need:
- 6 cups Cubed & Peeled Potatoes
- 1 Onion, Diced
- 1 cup Raw Cashews
- 4 cups Corn
- 2-3 cups Water
- 1/4 cup McKay’s Chicken Seasoning
- 1/4 cup Yeast Flakes
- 1/2 tsp Sage
- 1 tsp Onion Powder
- Salt to Taste
- Optional: 1 can Diced Fri-Chik with Juice
How to Make Vegetarian Potato Corn Chowder
- In a large pan, cook 6 cups cubed & peeled potatoes and 1 diced onion together in just enough water to cover the potatoes and onions for 10 minutes. Leave in the water.
- Take out 2 cups of the potato and onion mixture and transfer to a blender. Add 1 cup raw cashews, 1/2 cup corn, and 2 cups water. Blend to make a thick, creamy chowder. You may need to add up to an additional 1 cup water. Just add until you get the consistency pictured or desired.
- Transfer back into the sauce pan with potatoes and onions. Add in 1/4 cup McKay’s chicken seasoning, 1/4 cup yeast flakes, 1/2 tsp sage, and 1 tsp onion powder. Optional: Mix in 1 can Diced Fri-Chik with juice.
- Salt to taste. Additional water may need to be added to reach desired thickness.
- Simmer until warm. Do not boil. Remove bay leaf before serving.
Recipe Notes:
- Freezing – You can easily freeze this in a freezer safe container.
- Corn – You can use fresh, frozen, or drained canned corn.
- Fri-Chik – This vegetarian meat substitute is optional. You can easily leave it out.
- Almonds – You can easily swap the cashews for almonds, but the almond skins need to be removed. To do that, bring water to a boil in a sauce pan. Add 1 cup almonds to the boiling water. Turn the heat off and let the pan sit for 5 minutes. Drain. Run cold water over the almonds, then peel!
