Spaghetti Aglio e Olio
Every first and third Saturday we have potluck after our church service. One of those weeks is a themed potluck. My Grandma decided on making this Olive Oil Pasta (she calls it Olio), and I had never heard of it! When she told me how easy it was to make I knew I had to share the recipe with you!
You can serve this super easy dinner with Cloverleaf Dinner Rolls, Honey Garlic Butter Roasted Carrots, Buttery Garlic Green Beans, or Honey Butter Skillet Corn!
What You’ll Need:
- 1 lb Spaghetti, Cooked
- 4 tbsp Olive Oil
- 1 Onion, Diced
- 4-5 Garlic Cloves, Diced
- 2 tbsp Parsley, Chopped
- 1/2 – 1 cup Italian Bread Crumbs
How to Make Olive Oil Pasta
- Cook 1 lb spaghetti according to the directions on the box, drain, and set aside.
- In a large pan, sauté 2 tbsp olive oil, 1 diced onion, and 4-5 diced garlic cloves until the onions are translucent.
- Add cooked spaghetti to sautéed mixture and stir in additional 2 tbsp olive oil.
- Stir in 2 tbsp chopped parsley and 1/2 – 1 cup Italian bread crumbs.

- Sundried Tomatoes – Add sundried tomatoes for a different flavor!
- Garlic & Basil – Readers have commented they like adding garlic and basil to taste.
- Variation – One reader commented that she uses sundried tomatoes in place of the olive oil, added chopped sundried tomatoes with Kalamata olives and sautéed mushrooms with the garlic and onions!
