A simple meatball made out of tofu and baked to perfection with a sweet and sour sauce made with apricot jam!

Baked Tofu Meatballs
I get it, tofu is scary if you’ve never used it or haven’t found a recipe you like that uses it. There are a lot of scary things we push ourselves through if we really want to. I can think of a lot harder things than trying to cook with tofu! Making these tofu meatballs is nothing like using an Instant Pot for the first time!
As a life-long vegetarian, I have collected a lot of meatballs recipes over the years! Like my Grandma’s Saucy Vegetarian Meatballs and my Mom’s Vegetarian Rice Krispie Meatballs. Most recently I tried this recipe for Sweet & Sour Tofu Meatballs that a dear friend of mine made for potluck, and I knew I had to have the recipe! She was kind enough to let me share it with you. Enjoy!

What You’ll Need for the Meatballs:
- 12 oz Extra Firm Tofu
- 1 medium Onion
- 1 tsp Seasoned Salt
- 1/4 tsp Garlic Powder
- 1 tbsp Amino Acids
- 1 cup Pecan Meal
- 1 1/2 cups Ritz Crackers, Crushed
And the Sweet & Sour Sauce:
- 1/4 cup Oil
- 2 tbsp Onion, Finely Chopped
- 1/4 cup Lemon Juice
- 1/2 tsp Salt
- 3/4 cup Apricot Jam
- 1/2 tsp Oregano
- 1/2 cup Ketchup
- 2 tbsp Brown Sugar

How to Make Sweet & Sour Tofu Meatballs
- Preheat oven to 350 degrees and line a baking pan with parchment paper.
- Blend 12 oz extra firm tofu, 1 medium onion, 1 tsp seasoned salt, 1/4 tsp garlic powder, and 1 tbsp amino acids in a food processor then transfer to a bowl.
- Stir in 1 cup pecan meal and 1 1/2 cups crushed Ritz crackers.
- Firmly form into balls and place on prepared pan.
- Then prepare the sweet and sour sauce by combining 1/4 cup oil, 2 tbsp finely chopped onion, 1/4 cup lemon juice, 1/2 tsp salt, 3/4 cup apricot jam, 1/2 tsp oregano, 1/2 cup ketchup, and 2 tbsp brown sugar in a sauce pan over medium heat and bring to a boil, stirring frequently. Reduce the heat and simmer for 5 minutes.
- Pour sauce over the meatballs and bake for 30-45 minutes.
Recipe Notes:
- Baking – We have baked the meatballs separate from the sauce and they’ve turn out just as great!
- Freezing – You can freeze the cooked meatballs, without the sauce, in a freezer safe bag. You can freeze the sauce separately in a freezer safe container.
- Amino acids – You can substitute with soy sauce if you’d like.

Instructions

- Blend the first 5 ingredients of the meatballs in a food processor, then transfer to a bowl.
- Stir in pecan meal and crushed Ritz crackers.
- Firmly form into balls and place on prepared pan.
- Then prepare the sweet and sour sauce by combining all of the sauce ingredients into a sauce pan over medium heat and bring to a boil, stirring frequently. Reduce the heat and simmer for 5 minutes.
- Pour sauce over the meatballs and bake for 30-45 minutes.
