There are two very special little boys in my life: my son and my nephew. Their birthday’s are close together, so that means we get to have cake twice! Except… cake isn’t my favorite. I know, I know… it sounds crazy. I feel the same way when I hear someone say they don’t like chocolate! Let me explain. I don’t like traditional cake, like a grocery store cake smothered in buttercream frosting. So when it comes to birthday celebrations, I get creative!
My Mom has always made the kids super cool cakes for their birthday’s, but instead of a cake this year I thought, “What about cake batter?!”
I’ve seen recipes for Cake Batter Rice Krispie Treats on Pinterest before, so I thought I’d give that idea a try! Except I went rogue and used the inspiration to come up with a different idea, with a just a simple twist to a classic recipe!
You can mail this birthday cake, or a piece of the cake, to all of your favorite people on their birthday’s! Just make sure to cover the cake, or piece, well enough so it doesn’t dry out.
There is no easier way to whip up birthday cake! It takes about 10 minutes, or less, to make AND it tastes delicious!! Let the kids in on the fun and have them put on the sprinkles. I think we can all agree that you can never have too many sprinkles, right?!
Ingredients for Cake Batter Rice Krispie Treats
- Butter
- Regular Size Marshmallows
- Rice Krispies Cereal
- Funfetti Cake Mix
- Sprinkles
How to Make Cake Batter Rice Krispie Treats
- Lightly spray a spring foam pan with non-stick spray.
- Melt 4 tbsp butter in a large microwave safe bowl.
- Once the butter is melted, stir in 55 regular size marshmallows.
- Place in the microwave for 45 seconds.
- Remove from the microwave and stir the marshmallows and butter.
- Place back in the microwave for 45 seconds.
- Remove from the microwave and stir the marshmallows and butter.
- Add in 1 1/4 cups Funfetti cake mix. Stir until well combined.
- Add in 6 cups of Rice Krispies cereal. Stir until well mixed.
- Pour into greased spring foam pan and firmly press down until the mixture is evenly distributed.
- Sprinkle as many sprinkles as you’d like on the top as soon as the mixture is firmly pressed down. They will stick to the Rice Krispies better if you put them on while the mixture is still slightly warm!
Tips for Making Cake Batter Rice Krispie Treats
- The best advice I have for making Rice Krispie Treats is to follow the directions on the back of the Kraft Marshmallow Bag – the regular size marshmallows. That is by far the best recipe with the best results and it takes the shortest amount of time to make. See below for the exact recipe for the Cake Batter Rice Krispie Treats!
- It is my experience that melting the marshmallows on the stove top makes the marshmallows too thin. When you use the microwave technique on the bag of the bag, you are only putting them in the microwave for 1 1/2 minutes, taking a stir break at 45 seconds. That’s all it takes!
- For a lighter cake batter taste, you can reduce the amount of confetti cake mix to 1 cup and use 50 regular size marshmallows instead.
- Off brand marshmallows work just the same, but they don’t have the recipe you need on the back of the bag.
- To get the round cake look, use a spring foam pan. If you don’t have one, use an 8 x 8 pan and cut into squares.
- If you don’t want them as thick as pictured, use a 9 x 13 pan.
- To keep the mixture from sticking to your hands, put your hand in a plastic Ziplock bag and use it like a glove to press down on the mixture. If you are still having trouble with it sticking, lightly spray the outside of the bag with non-stick spray.
- Make sure to put the sprinkles on right away! That way they will stick to the Rice Krispie Treats.
How to Store Cake Batter Rice Krispie Treats
- Rice Krispie Treats are easy to store! You can keep them room temperature on the counter for up to 5 days as long as they are covered. Keep in mind the longer they sit around the more stale they become.
- You can keep these covered in the refrigerator, just make sure to remove them far enough in advance before eating so they reach room temperature which makes them soft again.
This Cake Batter Rice Krispie Treat Birthday Cake makes us feel young again. My husband and I are big kids – we LOVE kid stuff! In fact, I find myself reminding my husband that it’s my son’s new Lego set to put together not his! HA! We soak up as many kid experiences as we possibly can while we have a legitimate excuse.
